Long Live the Veg-o-lution !!!
We – the Senior Citizens of America – have been at the mercy of misguided Nutritionists far too long ! I refer, of course, to the current fondness for half-cooked vegetables !
About 20 years ago, Food Faddists from California –( a state well noted for fads and pernicious doctrines)-decided it would be a GOOD THING to "seal in" the vitamins and minerals found in veggies---by not cooking them properly.
Young homemakers across the nation became enchanted with the idea. If it is difficult to get family members to eat proper amounts of vegetables,making them even less palatable (while claiming it made them more healthy) was an almost perfect vehicle for nourishing some of the elements of Family Conflict-and –creating useful reservoirs of Guilt and Angst : that could be leveraged later for desired household,wardrobe,automotive,and other status-raising expenditures.
In time, Young America adapted to the concept of "chewing a cud" – like a cow or goat; and , in California, Radical Nutritionists exchanged "high-fives" and " knuckle bumps" , as they realized one of the tougher goals in putting America on an All-Veggie Diet had just been met.
The Senior Citizens of America were NOT enchanted with the half-cooked concept. For one thing,their aging teeth were not equal to grinding up large amounts of plant fiber. For another, they did not care for the taste---or the texture; and they said so.
The Nutritionists of America responded to this feeble challenge in a number of ways: the most prominent of which was to simply ignore all complaints – an old "Nursing Home" staple.
If anyone chanced to point out how much untouched vegetable matter was coming back on plates, and being dumped in the garbage---a smart Nutritionist could suggest (to the Powers-that-be) the Seniors were being overfed-and a reduction in food allowance should be considered.
Let us set aside the shrill cries of Nutritionists (and Dieticians) and ask one simple question:
If vegetables are returned –uneaten- whom do they nourish ??
Let us ask one more question :
If vegetables that are fully and properly cooked retain a significant part of their nutritional value,is it not wise and appropriate to provide them to our Senior Citizens ???
We, the Senior Citizens of America do NOT ask for special treatment or consideration.
We smile – good naturedly – when you discuss us in front of our children, and act as if we were all hard-of-hearing , or mentally impaired ---because we’ve learned not to sweat the small stuff.
All we ask, is that you cook our food properly ---including those fine green vegetables.
